It sounds to me you are using a keyboard setting with what is known as
“dead keys.” That means if you type the caret ^ and follow it by, e.g.,
an i, you'll get a î.
That is an OS setting and MATLAB should not try messing with it. Use
System Preferences > Keyboard > Input Sources to change your keyboard
layout.
